Dough Ingredients

  • 2 ½ cups of white flour
  • Baking powder only 1tbp
  • Curry powder 1tbp
  • ½ tsp turmeric
  • Dried parsley 1 tsp
  • Salted cold butter 1 cup, half of it is grated while the other half is cubed
  • Very cold Almond milk 2 tbsps
  • Dried thyme ½ tsp
  • Egg wash for baking

Beef Filling

  • Ground beef
  • Extra virgin oil
  • Green onions
  • Minced scotch bonnet peppers
  • Garlic cloves
  • Beef stock
  • Ginger powder
  • Thyme sprigs
  • Sea salt
  • Black pepper
  • Onion powder
  • Smoked paprika
  • Flavo Riz or all-purpose seasoning
  • Soy sauce
  • Browning
  • Jamaican hot sauce
  • Beef bouillon
  • Red pepper flakes

Directions for Dough Preparation

  1. Put the ingredients of the dough such as flour, baking powder, curry powder, turmeric, parsley, and thyme, and mix them well.
  2. Add cubed and grated cold butter to a pastry blender to blend butter in dry ingredients until it’s crumbly
  3. Pour cold milk and stir, try to keep the dough not too wet
  4. Wrap the dough in a plastic wrap and chill it for an hour.

Directions for Beef Filling

  1. Add the mentioned seasonings in the bowl with ground beef to mix well.
  2. Heat the minced garlic in a skillet and scotch bonnet pepper until it gives off the fragrance. Add the seasoned ground beef to stir fry it till it cooks well.
  3. Add soy sauce, beef bouillon, hot sauce, browning, beef stock, and thyme sprigs and mix well. Let the beef cook for 20 minutes till it is thick like sauce instead of dry. 
  4. Keep the beef aside and let it cool

Final Directions for Baking

  1. Preheat the oven to 400 F degrees
  2. Remove the chilled dough from the refrigerator and roll it in rectangular shapes. Cut into semi-circle shapes.
  3. Add the beef filling between two sem circles and gently press the edges with a fork to enclose the patty, and that’s how you make all the patties.
  4. Brush the patties with eggwash before placing them in the oven for 20 minutes for baking or until they turn golden brown.
  5. Once done, remove it from the oven and let it cool a bit before serving.
